1/2 cup each diced green pepper, onion, and mushrooms
2 to 3 tablespoons butter or margarine
4 eggs
1/4 teaspoon salt Pinch pepper
1/2 cup shredded cheddar cheese

1. In a skillet, sauté green pepper, onion, and mushrooms in butter until tender. Remove with a slotted spoon and set aside.

2. In a small bowl, beat eggs, salt, and pepper. Pour into the skillet. Cook over medium heat; as eggs set, lift edges, letting uncooked portion flow underneath.

3. When the eggs are set, spoon vegetables and cheese over one side; fold omelet over filling. Cover and let stand until cheese is melted, 1 to 2 minutes.

Adobo  (Everybody loves Adobo!)
1/4 k. chicken adobo
1/4 k. pork
3T. soy sauce
3T. vinegar
garlic, cloves, crushed
1 T. cooking oil
1. Saute garlic in cooking oil until light brown.
2. Add pork, when pork is half cooked
3. Add chicken, soy sauce and vinegar
4. Let it boil and reduced liquid
Serve with boiled rice
Peach, Pineapple and Banana Smoothie
1 whole             fresh or preserved fruit peaches
1 medium size   banana, ripe, peeled
1 cup                pineapple juice
3 Tbsp              non-fat yoghurt, plain
2 Tbsp              honey
1 cup                crushed iced
1. In a blender, add all ingredients
2. Blend on light speed for 30 seconds
3. Serve             

Brazilian Fruit Salad


1 medium can fruit cocktail
1 cup all purpose cream
1 can condensed milk
    add your favorite nuts..... cashew, walnut, pili, etc.
1. Mix all ingredients
2. Chill
3. Serve
